Summer Kofta Sandwich feat. Table for 5

Well, it’s another collaboration with one of my favorite content creators in Bahrain, Table for 5! If you’re unfamiliar with the culinary queen that is Manal Al Saleh and her fabulous Instagram page Table for 5, let me put you on real quick.

Manal is a natural in the kitchen. Every dish she makes and films with effortless elegance and entertainment, which makes us actually want to jump in the kitchen with her! Luckily for me I got to do that last month.

The process took actual weeks until we finally set on a date to get together. And I’m glad we did! This dish was conceived through instagram DMs and executed quite quickly and easily in Manal’s kitchen. We responded to requests from you guys for a light and easy summer dish and this is what we came up with. Instead of making everything from scratch, all you have to do is procure a few ready made ingredients, namely kofta from Alosra, and Pita bread from Agora. The rest you can assemble in record time. Make a fresh salad, pickle some onions with Manal’s speedy hack, and whip up a creamy and luxurious sumac and tahini yogurt sauce.

So without further ado, here is the recipe you’ve all been waiting for. I promise you after making this for your family on the next BBQ or even everyday lunch, you’ll be thanked and hugged A LOT! Oh yes, and if you’re a vegetarian, or just trying to cut down on meat, I highly recommend grilling some Halloumi Cheese and you’re in business!

Ingredients:

  • Kofta Skewers (Alosra Supermarket) or Halloumi Cheese

  • Pita Bread (Agora)

    For the Yogurt Sauce:

  • 2 cups of Greek Yogurt

  • 2 Tbsp Sumac

  • 2 garlic cloves

  • Lemon juice

  • Lemon zest

  • Pinch of Salt

  • 2 Tbsp Tahini

For the Salad:

  • Parsley handful, chopped

  • 1 Cucumber, cubed

  • 1 Tomato, deseeded and cubed

  • Coriander handful, chopped

  • Mint handful, chopped

  • Lemon Juice a good squeeze

  • 2 Avocados

  • 1 Tsp Black Sesame

  • 1 Tbsp Pumpkin Seeds (Alrifai)

  • Salt

  • 2 Tsp Sumac

  • Drizzle of Olive Oil (just a little)

Sriracha (this took it to a whole other level)

Directions:

  1. First make the yogurt sauce: In a medium sized bowl combine the greek yogurt, garlic, tahini, lemon juice, lemon zest and salt. Give it a good mix. Add sumac. Then set aside.

  2. To assemble the salad: Mix all the ingredients stated above together and set aside.

  3. To prepare the beef Kofta: take it out of the package and season with salt and pepper.

  4. In a shallow frying pan, add a bit of oil. Begin to lightly fry on one side, about 1 minute and a half. Then flip and cook for another 1 minute and a half.

  5. When beef is cooked, remove it and cover with foil for minimum 3 minutes to reabsorb all the juices.

  6. When you’re ready to serve, heat the pita bread on an open fire to “awaken” it.

  7. Now that you have all the elements ready, assemble your sandwich however you like! You can even set up a buffet style table for gatherings if you’re sharing this meal with friends and family!
